Drunken Noodles

Ingredients

  • 1 cup Straw mushroom, canned, drained
  • 1 cup sliced shiitake mushroom
  • 1 cabbage, small head
  • 1 yellow bell pepper, strips
  • 1 yellow bell pepper, strips
  • 5 cloves of garlic
  • 1 tbsp crushed red chilli flakes
  • 1 tbsp olive oil
  • ½ tbsp stevia
  • 2 tbsp tamari sauce
  • 115g rice noodles

Directions

  • Begin by slicing the bell pepper into long, thin strips. Halve the straw mushrooms, chop the garlic, and remove the basil from the stems. Cut the cabbage to about 3” length. Bring a pot of salted water to a boil and cook rice noodles according to the instructions given on the packet. Once cooked, drain and rinse the noodles in cold water. 
  • In a non-stick pan, heat 2 tbsp. of oil over medium-high heat. Add garlic and chili flakes and stir for about 30 seconds. Then, add bell peppers, mushrooms, basil, and cabbage and stir for another minute. 
  • Push everything to the edge of the pan and add the noodles. Pour tamari sauce, add stevia, and mix quickly but avoid overcooking, as the rice noodles can become mushy.
