Grilled Tofu with Garlic Broccoli and Mediterranean Herb Marinade

Ingredients

  • 1 block (14 oz) extra-firm tofu, drained and pressed
  • 4 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 head broccoli, cut into florets
  • Himalayan salt and pepper to taste

Directions

Marinate the Tofu:

  • In a bowl, whisk together 2 tablespoons olive oil, minced garlic, 2 tablespoons fresh lemon juice, dried oregano, dried basil, dried thyme, salt, and pepper to create the Mediterranean herb marinade. 
  • Slice the tofu block into two equal pieces to form tofu “steaks.” 
  • Place the tofu steaks in a shallow dish or resealable plastic bag. 
  • Pour the marinade over the tofu, ensuring they are fully coated. Marinate in the refrigerator for at least 30 minutes. 

Prepare the Garlic Broccoli: 

  • Preheat the oven to 400°F (200°C). 
  • In a large bowl, toss the broccoli florets with 2 tablespoons olive oil, 2 tablespoons minced garlic, salt, and pepper until evenly coated. 
  • Spread the seasoned broccoli florets in a single layer on a baking sheet. 
  • Roast in the preheated oven for 20-25 minutes, or until the broccoli is tender and lightly browned, stirring halfway through cooking. 

Grill the Tofu: 

  • Preheat a grill or grill pan over medium-high heat. 
  • Remove the tofu steaks from the marinade and discard any excess marinade. 
  • Grill the tofu steaks for 4-5 minutes per side or until grill marks appear and the tofu is heated through. 

Serve: 

  • Divide the garlic broccoli between two plates. 
  • Place a grilled tofu steak on top of each plate. 
  • Garnish with fresh herbs, such as chopped parsley or basil, if desired, and serve.
