Directions
Marinate the Tofu:
- In a bowl, whisk together 2 tablespoons olive oil, minced garlic, 2 tablespoons fresh lemon juice, dried oregano, dried basil, dried thyme, salt, and pepper to create the Mediterranean herb marinade.
- Slice the tofu block into two equal pieces to form tofu “steaks.”
- Place the tofu steaks in a shallow dish or resealable plastic bag.
- Pour the marinade over the tofu, ensuring they are fully coated. Marinate in the refrigerator for at least 30 minutes.
Prepare the Garlic Broccoli:
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the broccoli florets with 2 tablespoons olive oil, 2 tablespoons minced garlic, salt, and pepper until evenly coated.
- Spread the seasoned broccoli florets in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the broccoli is tender and lightly browned, stirring halfway through cooking.
Grill the Tofu:
- Preheat a grill or grill pan over medium-high heat.
- Remove the tofu steaks from the marinade and discard any excess marinade.
- Grill the tofu steaks for 4-5 minutes per side or until grill marks appear and the tofu is heated through.
Serve:
- Divide the garlic broccoli between two plates.
- Place a grilled tofu steak on top of each plate.
- Garnish with fresh herbs, such as chopped parsley or basil, if desired, and serve.
