Quinoa Breakfast Bowl with Berries & Almonds

Ingredients

  • 1/2 cup quinoa, rinsed
  • 1 cup unsweetened almond milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed berries (such as strawberries, blueberries, raspberries)
  • 2 tablespoons sliced almonds
  • 1 tablespoon chia seeds
  • 1 tablespoon brown rice syrup

Directions

  • In a small saucepan, combine the rinsed quinoa and almond milk. Bring to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the quinoa is cooked and fluffy. 
  • Once the quinoa is cooked, stir in the cinnamon and vanilla extract. 
  • Divide the cooked quinoa into two bowls. 
  • Top each bowl with mixed berries, sliced almonds, and chia seeds. 
  • Drizzle brown rice syrup on top. 
  • Serve warm and enjoy!
