Directions
- In a skillet, heat olive oil over medium heat. Add ground turkey and cook until browned.
- Add cumin, coriander, turmeric, cinnamon, salt, and pepper to the meat. Stir well to combine.
- Add chopped spinach and cook until wilted.
For Avocado Sauce:
- In a blender or food processor, combine ripe avocado, olive oil, lime juice, salt, and pepper. Blend until smooth, adding water as needed for the desired consistency.
Assembly:
- Warm the ready-made almond flour tortillas according to the package instructions.
- Lay out the tortillas on a clean surface.
- Spoon the ground turkey mixture onto each tortilla.
- Top with avocado slices, shredded carrots, and a drizzle of avocado sauce.
- Garnish with fresh cilantro.
- Fold in the sides of the tortilla and then roll it up to form a burrito.
