Turkey Burritos

Ingredients For the burrito

  • 1/2 lb. ground turkey (93% lean)
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 1/2 avocado, sliced
  • 1/4 cup shredded carrots
  • Fresh cilantro for garnish
  • 3 almond flour tortillas

For the sauce

  • 1/2 ripe avocado
  • 1 tablespoon olive oil
  • 1/2 tablespoon lime juice
  • Salt and pepper to taste
  • 1 tablespoon water (adjust for desired consistency)

Directions

  • In a skillet, heat olive oil over medium heat. Add ground turkey and cook until browned.
  • Add cumin, coriander, turmeric, cinnamon, salt, and pepper to the meat. Stir well to combine. 
  • Add chopped spinach and cook until wilted.

For Avocado Sauce:

  • In a blender or food processor, combine ripe avocado, olive oil, lime juice, salt, and pepper. Blend until smooth, adding water as needed for the desired consistency.

Assembly:

  • Warm the ready-made almond flour tortillas according to the package instructions. 
  • Lay out the tortillas on a clean surface. 
  • Spoon the ground turkey mixture onto each tortilla. 
  • Top with avocado slices, shredded carrots, and a drizzle of avocado sauce. 
  • Garnish with fresh cilantro. 
  • Fold in the sides of the tortilla and then roll it up to form a burrito.
